Production area for the Côtes Catalanes and Côtes du Roussillon Villages appellations, in the communes of Maury, Tautavel and Estagel.
Made up of schistous marl from the secondary period (Aptian), the layered structure of this soil allows the roots to penetrate deeply to find the moisture they need to feed themselves. The black colour of the shale enables it to absorb heat during the day and release it at night, allowing the grapes to reach full maturity.
Grape varieties - Vinification
Old vines selected for their low yield (25 hl/ha), harvested at full maturity. Harvested by hand. Grain by grain selective sorting. Direct pressing in the cellar and alcoholic fermentation in new oak barrels selected from the best merandiers in the French forests.
60% Grenache blanc vieilles vignes
40% Carignan blanc 80-year-old vines
Aged on fine lees for a maximum of 4 to 6 months in oak barrels from the forests of central France, with regular stirring of the lees.
Tasting
The colour is clear and limpid. The tears are numerous, dense and regular. The nose is complex with aromas of fresh fruit, grapefruit, preserved lemon, mango, lined with spices, cardamom and delicate aromas of lime blossom. On the palate: a generous attack, typical of low-yield wines. There is a fine balance between acidity and freshness, and a long-lasting aroma with a pleasant mineral finish. This wine reveals the high potential of these white grape varieties on the specific terroir of black schist.
Service & Development prospects
A wine for gastronomy and pleasure. Serve at a temperature of 10 to 12°C. Can be drunk within 5 years of its release with white-fleshed fish cooked either a la plancha or in sauce. It can also be enjoyed as it evolves...
